When September rolls in, I look forward to a fresh crop of apples for baking season. Reliably, I find myself trying to remember the differences between crisp, cobbler, crumble, and so on.
You too? Well, among our choices are cobbler (crust on top or bottom), crisp (crumbled butter, sugar and flour on top), brown betty (like crisp, but with “topping” in the middle), crumble (see crisp, but British and add oats), buckle (this one’s sliceable – it has cake under the fruit), slump or grunt (dumplings on top, from New England), and pandowdy (top crust is cut and crushed into the fruit during baking… mmmmm!). And let’s not forget pie, tart, galette, dumpling, turnover….
I’m inclined toward pie and crisp, with maybe a Granny Smith for extra pucker. How about you?
